I am always saying I want to eat healthier, because even though I eat well a lot of the time I don't have the self-control to keep from polishing off the Chex Mix at Bunko or asking for another basket of chips at Las Delicious (who CAN say no to their chips?!). Sometimes I even think it's difficult to come up with healthy meals that taste good, but this time of year I have no excuses. Check out this salad of watermelon, mint, blue cheese and arugula... Yum! I LOVE summertime and LOVE fresh fruits and veggies!
